Singapore Airlines’ Guest Chef Unveils New Seasonal Autumn Menu

Singapore Airlines’ guest chef, Monica Galetti, has launched her latest autumn menus. The limited-edition dishes will be served in Suites, First Class and Business Class cabins on Singapore Airlines flights departing from London Heathrow, London Gatwick and Manchester, from 1 September until 30 November 2026.

Blending rich, autumnal flavours in her new onboard menu, Monica presents a collection of refined dishes warming customers’ palates as we enter the new season. A showcase of seasonal produce, the menu includes ingredients such as autumn squash, black truffle, chestnuts and bean ragout, delivering indulgent creations to savour at 35,000 feet.

In Suites and First Class, the four-course dining experience begins with King Crab dressed with Furikake, Artichoke and Endive with Black Truffle, followed by a Caramelised Autumn Squash and Black Truffle Soup. For the main course, customers can indulge in Slow Braised Beef Cheek in Port and Red Wine coupled with Burnt Butter Mash, expertly balanced by a White Chocolate Mousse topped with Passionfruit Sauce and Spiced Biscoff to round up the meal.

In Business Class, customers will also experience King Crab dressed with Furikake, Artichoke and Endive to start. For the main, customers can enjoy Ossobuco on a bed of Borlotti Bean and Saffron Ragout. To finish, an English classic of Blackberry Treacle Tart topped with a Mascarpone Ripple makes the meal complete.

Chef Monica Galetti, said: “Autumn, like spring, is a season of transition, inviting comfort to the finer details. The season brings versatile ingredients to the menu, offering depth of authentic autumnal flavours, with a focus on delicate plating and a range of textures. Each dish brings a bold yet refined experience to what fine dining can be in the air.”

Mohamed Rafi Mar, Singapore Airlines General Manager UK & Ireland, said: “We are consistently impressed by the quality and innovation that Monica brings to the onboard dining experience.
